"A balanced vegetarian diet is naturally richer in grains, vegetables, legumes, fruits and seeds, foods very rich in micronutrients and phytochemicals that exercise a protective function and contribute to the balance of the organism while preserving health," says the nutritionist at Nutrawell, Alessandra Luglio.
Still, according to the professional, in the vegetable kingdom saturated fats appear in lesser amounts and cholesterol is non-existent, since it comes only from foods of animal origin.
When it comes to supplementing and replacing plant foods, soy is a good ally, but according to nutritionist and professor Camila Ribeiro Gomide Queiroz, quinoa is the best option because it is considered a super food. “It contains all the essential amino acids, which the body does not produce, being considered the best substitute for meat”, she adds.
