Enjoy the newest muffin recipe from one of our favourite vegan restaurants in Dublin.
This is the new vegan version of a traditional US recipe, but one that is very popular in Irish lands. The Blueberry Muffin image has been the symbol of the state of Minnesota since 1988. This is because this fruit is native to the northeast of this state where it grows in abundance. Very common in Ireland, this small fruit is rich in nutrients such as vitamins A, C, E, minerals such as zinc, iron, copper and potassium. Also known for its high antioxidant and anti-inflammatory power.
Ingredients
3 cups of flour
1 cup granulated sugar or demerara
1 tablespoon baking powder
1 teaspoon of baking soda
1 tablespoon of vanilla essence
1 1/4 cup water
3/4 cup oil
1 pinch of salt
2 cups blueberries
How to Prepare it:
Start by preparing the shape of the muffins. If you have a special muffin pan and you want it, you can use paper cups inside the pan cavities. You can also use pie shapes. Paper cups are optional. As long as the pan is well greased, you can only make it with the muffin pan or the patty pans. Even if you use the paper cups you should grease them. Many people use spray oil. I prefer to use the traditional method of greasing the mold with normal vegetable oil, or coconut oil.
In a bowl, put the dry ingredients first (with the exception of the yeast that must be added last), and mix. Then add the water alternating with the oil and add the vanilla essence. Stir it by hand until you can add the ingredients well and obtain a smooth and uniform dough. Add the blueberries and mix gently. After that put the baking powder and mix again without stiring.
